How to Make Jiaozi (Dumplings)*  
Ingredients:  [Outside skin] flour, water
[Inside filling] chives, ground chicken, shrimp, salt, fried eggs, sesame oil

  
- Mix the flour and water together for a firm, but kneadable dough.
- Combine the ingredients for the filling. 
- Cut the dough into slices.  Separate into small chunks. 
- Roll out dough into a circle with a rolling pin.

  
- Insert a small spoonful of filling into the dough. 
- Fold the two halves together and pinch the sides. 
- Jiaozi can be boiled or fried for a good taste.

* Best results if made with a local.
